CPFM Study Guide

The Certified Professional Food Manager (CPFM) Examination offered by the International Food Service Executives Association (IFSEA) qualifies successful candidates as Certified Professional Food Managers (CPFM).

Candidates who wish to sit for the CPFM exam must first meet the eligibility requirements set by the IFSEA.

* IFSEA recommends the candidate have at least three years of food manager experience prior to applying to take the exam.
* The exam is open to military personnel who have achieved an E-4, E-5, E-6 or higher pay grade.
* Students can also take the exam if they are in a dietary or nutrition related degree program.

The CPFM exam consists of 80 multiple choice questions. Candidates will have to answer questions related to the following topic areas:

* Cooking procedures
* Beverages and wines
* Dining room service
* Dining room setup and safety
* Industry protocols
* Managing employees
* Menus
* Purchase orders
* Accounting
* Sanitation

The exam fee runs $159 for IFSEA members or $208 for all others. The exams can be administered to high school students. When the candidate submits the registration application they will choose the date and time of their exam. Candidates should plan to arrive a bit early on the day of the exam, and bring with them at least one government issued photo ID.

The exam can be taken online. The candidate will need to have internet connection and the ability to install programs on their own machine. The organization will have you download a standalone software application that will administer the multiple choice question test. Candidates will have two hours to complete the exam.
